Grilled sea bream with tomato and olives

Flaky sea bream fillets served with a bright Mediterranean sauce.

    Ingredients

    • 0.5 lemon
    • 0.5 tablespoon parsley
    • 0.5 garlic clove
    • 1 tomato
    • 50 g pitted olives
    • 0.5 spring onion stalk (around 30 g)
    • 1 tablespoon balsamic vinegar
    • 0.5 teaspoon capers
    • 60 ml olive oil
    • 5 g pine nuts
    • 2 sea bream fillets
    • 1.5 tablespoons olive oil
    • thyme, rosemary, basil
    • Salt
    • pepper

    Instructions

    1. Prepare the sauce: Grate the zest of half the lemon then squeeze it. Chop the parsley and garlic then cut the tomatoes into cubes and slice the olives. Chop the spring onion. Put everything in a bowl. Add the balsamic vinegar, capers and olive oil. Mix.
    2. In a hot pan, add the pine nuts and brown at high heat for 2 minutes. Immediately place them onto a plate. Leave to cool, then add them to the bowl. Set aside.
    3. Place the sea bream fillets on the baking tray, skin side up. Add the zest of the remaining half lemon as well as the juice.
    4. Salt and pepper the sea bream fillets on both sides. Drizzle the olive oil over the fillets, sprinkle with thyme and rosemary.
    5. Put the baking tray in the highest position in the oven.
    6. Turn on the appliance. Start the GRILL programme at 200°C and set the cooking time to 10 min. Press START.
    7. Serve with the sauce.
