Mediterranean-style cod

Tender cod fillets baked with olives, lemon, and herbs.

    Ingredients

    • 4 cod loin fillets (150 g each)
    • 50 g pitted black olives
    • 0.5 lemons (zest and juice)
    • 1 tsp chilli powder
    • 1.5 chopped garlic cloves
    • 10 cl balsamic vinegar
    • 1 tbsp olive oil
    • Salt
    • pepper

    Instructions

    1. Slice the olives. In a recipient, mix the olives with the lemon zest, chilli, garlic, balsamic vinegar and olive oil. Season with salt and pepper.
    2. Cover the cod with lemon juice and olive oil using a brush.
    3. Place the cod in the oven fitted with the plate. Start the cooking process.
    4. Check that the fish is cooked through, which may vary depending on the size of the pieces. Increase the time by a further minute, if necessary, until the flesh flakes easily with a fork.
    5. Serve the cod with the olive mixture. Accompany with courgette chips.
