Veggie-stuffed courgettes

Courgettes filled with a colorful mix of vegetables and cheese.

    Ingredients

    • 2 courgettes
    • 200 g tomatoes
    • 80 g red pepper
    • 1 small white onion
    • 1 tablespoon chives
    • 100 g grated cheddar
    • 0.5 teaspoon chilli powder
    • 3 tablespoons olive oil
    • Salt
    • pepper
    • Breadcrumbs
    • 400 ml vegetable stock

    Instructions

    1. Wash the courgettes, trim the ends and cut them in half lengthways. Using a teaspoon, hollow out the centre and remove all the seeds.
    2. Wash, seed and chop the tomatoes. Wash, seed and finely dice the red pepper. Peel and finely chop the onion. Finely chop the chives.
    3. In a bowl, combine the tomatoes, red pepper, chopped onion and chopped chives. Add the grated cheddar, chilli powder and olive oil. Season with salt and pepper. Mix well.
    4. Place the stuffing in the centre of each courgette, making a slight dome along the length. Using your fingertips, sprinkle some breadcrumbs over the courgettes.
    5. Pour the vegetable stock into the baking tray. Place the stuffed courgettes on the baking tray. Put the baking tray in the middle position in the oven.
    6. Turn on the appliance. Start the AIR FRY programme at 180°C and set the cooking time to 50 min. Press START.
    7. Serve hot with plain rice.
